Seafood Is the Highest-Stakes Perishable You Can Ship
Seafood sits at the extreme end of perishable shipping because the stakes are food safety, not just quality. Raw fish and shellfish can spoil within hours at room temperature, and spoiled seafood isn't merely unappetizing — it's a genuine health hazard. That raises the bar above every other cold-chain item: where a melted chocolate is a disappointment and a wilted flower is a refund, mishandled seafood can make someone sick. So the whole discipline is built around aggressive cooling and the shortest possible transit, with no tolerance for the box getting warm.
In practice that means overnight transit, essentially always. Fresh raw seafood should never ride a 2-day or ground service; it goes FedEx Priority Overnight or UPS Next Day Air so it's in the customer's hands the next morning. The cooling has to hold that entire window at a safe temperature, and the packaging has to satisfy carrier rules for whatever coolant you use. Get the speed and the cold right and mail-order seafood — lobster, salmon, oysters — arrives restaurant-fresh; get either wrong and it's dangerous.

Dry Ice: The Preferred Coolant — and a Hazmat Material
For most fresh seafood, dry ice is the cooling medium of choice because it holds far lower temperatures for longer than gel packs — it keeps product frozen or near-frozen across an overnight trip. But dry ice is a regulated hazardous material (UN 1845), and that changes how you ship. Packages must carry a UN 1845 dry ice label with the weight of dry ice marked (in kg), the shipment details must declare the dry ice at label creation, and the box can never be sealed airtight — subliming dry ice releases CO₂ gas that will rupture a sealed container, so the packaging needs to vent. Critically, USPS prohibits dry ice entirely; dry-ice seafood ships via FedEx or UPS.
Amount and placement matter. A rough guide is 5–10 lbs of dry ice for a standard 10–15 lb seafood shipment in an EPS foam cooler, since dry ice sublimates at roughly 5–10 lbs per 24 hours depending on the cooler; when uncertain, use more, because excess dry ice is cheap and spoiled seafood is not. Place the dry ice on top of the sealed seafood inside the foam cooler — cold air falls, so top-loaded dry ice cools the whole box as it sublimates. Gel packs are the alternative for cooked seafood, smoked fish, or short overnight hops in cool weather, and they avoid the hazmat paperwork entirely.

Live Shellfish vs Raw vs Cooked
Seafood isn't one shipping problem — the form dictates the method. Live shellfish (lobster, oysters, clams, crab) must arrive alive, which means they need to stay cold enough to remain dormant but must NOT be frozen or suffocated: they ship on gel packs or a modest amount of ice in a vented, insulated box with damp packing (seaweed or damp newspaper) to keep them cool and moist, overnight, breathing. Dry ice can be too cold and its CO₂ can kill live shellfish, so live product is the case where dry ice is often the wrong choice.
Raw fish and shucked/frozen seafood, by contrast, want maximum cold — dry ice keeps salmon, tuna, and shrimp frozen solid across an overnight trip, which is exactly what you want for raw product. Cooked and smoked seafood is the most forgiving: it tolerates gel-pack cooling and short transits better than raw. So before packing, decide which bucket the product is in — living, raw-frozen, or cooked — because the right coolant for one is the wrong coolant for another.
The Mail-Order Seafood Reality
Direct-to-consumer seafood — lobster gift boxes, DTC salmon and fish brands, specialty shellfish — is a real market precisely because most people can't get it fresh locally, and the sellers who succeed treat every shipment as a guaranteed-overnight cold-chain operation. That means shipping early in the week so nothing risks a weekend in a facility, timing delivery so the box isn't sitting out, and communicating clearly that the customer should refrigerate or cook promptly on arrival. The last mile is part of the food-safety chain too.
Cost follows from the requirements: overnight service plus dry ice plus foam coolers make seafood expensive to ship, and that cost has to be built into pricing rather than absorbed. Serious sellers also insure and document high-value shipments and lean toward over-cooling rather than cutting it close, because a single warm box isn't just a lost sale — it's a safety incident and a reputational hit. Respect seafood's stakes, and mail-order fish arrives beautifully; treat it like ordinary food, and it goes wrong fast.
